A Favorite In Our Home

I've said all along that this blog would be a place for Shaklee, but also for recipes, workouts, car stuff, and things we enjoy. So today, I want to share with you a recipe that is a favorite in our home. It comes from a cookbook we bought in New Orleans over 20 years ago. The name of the cookbook is "Favorite Recipes from New Orleans." In this gem, you will find Chicken Jambalaya. But in our family we have decided to take out the chicken and we add extra smoked sausage. So without further adieu, here is the recipe.

Chicken Jambalaya

9 chicken thighs

3 medium onions

4 ribs of celery

5 cloves of garlic

2 bell peppers

1 small can of tomato paste

1 large can diced tomatoes

1 lb smoked sausage (we do 2 pounds instead of chicken)

Cayenne Pepper

Chili Powder

Parsley Flakes

Worcestershire Sauce

Tabasco

Salt and pepper

1 cup rice

3 bay leaves

Boil chicken and sausage until tender. Reserve liquid. Saute chopped onion, celery, bell peppers, garlic in light olive oil. Add cut up chicken and sausage, tomatoes and tomato paste. Add seasoning to taste. Cook for thirty to forty minutes on low heat. Add two and a half cups of reserved liquid and rice. Cook covered until rice is tender. Serve and enjoy pure deliciousness!!
